1 (16 ounce) container low-fat sour cream
2 cucumbers, peeled, seeded & chopped
2 Tbsp green onions, chopped
2 Tbsp lemon juice
1 cup fresh dill, chopped
1 tsp salt or to taste
Mix sour cream, cucumber and dill in a bowl until thoroughly blended. Stir in lemon juice and salt. Cover and refrigerate 1-2 hours.
Enjoy with pita or vegetable chips.
