Ingredients:

    •    2 Tbsp avocado oil

    •    1 large onion, thinly sliced

    •    1 Tbsp minced garlic

    •    16 oz raw kale, chopped

    •    Salt and black pepper, to taste

Instructions:

    1.    Heat avocado oil in a large skillet over medium heat.

    2.    Add the sliced onion and cook, stirring occasionally, until caramelized and golden brown—about 10–12 minutes.

    3.    Stir in the minced garlic and cook for 1–2 minutes until fragrant.

    4.    Add the chopped kale and continue to cook, stirring frequently, until wilted and tender, about 5–7 minutes.

    5.    Season with salt and black pepper to taste.

    6.    Serve warm as a side dish or pair with your favorite protein—grilled chicken, baked salmon, or tofu all work great.
