1 cup extra coarse bulgur wheat
1 cup water
1 lb edamame, without shells cooked & cooled
15 oz can no salt black beans
1 large tomato, chopped
1 medium red onion, finely chopped
3 tablespoons olive oil
2 tablespoons red wine vinegar
salt & pepper
Combine water & bulgur wheat in a saucepan. Bring to a boil. Reduce heat, cover & simmer until all water is absorbed.
Place in a bowl. Combine the rest of ingredients & refrigerate.
