Ingredients:

1 cup brown lentils

¾  cup chopped parsley

1 bunch chopped green onions

2 large tomatoes (deseeded & diced)

1 teaspoon cumin

1 clove garlic

1 teaspoon white vinegar

juice of a medium lemon

2 tablespoon olive oil

½ cup pomegranate seeds

salt & black pepper to taste

 

Directions

 Wash lentils and place in a pot. Add a pinch of salt. Cover with water and let it boil for 20 minutes.

Drain lentils. Add parsley, green onions, tomatoes, cumin, garlic, vinegar, lemon juice, olive, salt and pepper. Top with pomegranate seed. Garnish with pita chips.
